In this Gordon Ramsay’s Secret Service episode, Gordon visits Wilson’s Secret Sauce in Philadelphia, Pennsylvania.

Wilson’s Secret Sauce is owned by Steve and Kelly Wilson.

Gordon arrives in the middle of the night and looks in the freezer.

He finds a barbecued brisket that has been frozen for days.

Gordon checks their menu and sees it has too many items.

He switches on a blacklight and sees that most of the handles are dirty and contaminated.

The next day, Gordon is at his command center van watching the staff interview for a fake reality TV show.

Steve and Kelly are the owners and the business started out as a catering business for tailgate events.

Steve had the bright idea for a physical space.

Kelly was resistant but went along with it.

Riley is Kelly’s son and Steve’s stepson and he works in the kitchen.

Kelly runs the whole dining room by herself and she needs help.

Gordon has two undercover chefs go in as spies.

They stand waiting for a long time and no one seats them.

After 15 minutes, they are taken to a table and given their 70 item menu.

They order and are confused by egg rolls on the menu.

Their food is made quickly but is left to go cold waiting to go out.

Customers are also left waiting, along with a pregnant woman.

The food is served to the chef spies.

They find the food to be bland, dry and burnt in some places.

Gordon goes into the restaurant and stops the service completely.

He calls the staff together and tells them the bacteria reading was off the charts.

Gordon tells them all the problems he saw, from the large menu to the frozen briskets.

He calls out that they left a 38-week pregnant woman standing for 25 minutes.

They are short-staffed and made a joke of it and they reheat brisket which is bad.

Generally, he thinks that they should not have started a restaurant as it is vastly different from catering.

He sits with Kelly, and she is sad because she spends all day in the restaurant.

She is missing all of her son’s sports games at his school.

The family sits and talks together about the insider giving Gordon information.

Kelly and Steve have a conversation and it gets heated.

Kelly opens up and Steve finally sees that his wife is unhappy.

Gordon watches this interaction, then meets with the family to see their dynamic.

Steve is made to burn the old menu as a sign he is willing to accept Gordon’s help to turn things around.

The next day, Gordon takes Steve out on a motorcycle ride to clear his head.

Gordon advises him to open up about the business and what he has been going through.

Kelly is brought in and Gordon leaves them alone.

Steve apologizes for what he has put Kelly through.

Then he tells her the state of the finances and she appreciates being included.

Gordon’s team has been hard at work and the family is brought into the new restaurant.

Everything has been changed, from the tables and chairs to the decor of the walls.

The kitchen has been redesigned and they have been given new cookware.

The space is warm, inviting, and looks fresh.

Kelly is moved to tears by the changes Gordons team has made.

Steve says he may have to start working in front of the house now because of how good it looks.

Their menu has also been redesigned.

Brisket goes into most of the dishes so there is no waste.

They will be using scales for proper portion control.

The staff are trained on making the new menu items and plating it.

Gordon introduces the spies who are going to be their support.

They will be a phone call away for 6-12 months whenever they need help and advice.

Gordon pulls the family aside to reveal his insider.

It is Joe the cook.

Kelly is given front of house support with three servers.

The restaurant opens for the relaunch.

Everything starts great and it is running efficiently.

Eagles player John Mailiata is the final surprise for them as the family are big fans of the team.

Steve is shy and has not gone out to greet his customers.

Gordon relieves him of his tasks in the kitchen.

Steve goes straight to John and admits he has been a season ticket holder since 1990.

John promises he will bring his team members as the food and service were great.

The brisket finishes, so it is taken off the menu for the night.

This is what Steve had been afraid of in the past but it is a good sign business is going well.

Gordon leaves them all happy with how the relaunch had gone.
